Easy Cheesy Gluten-Free Chicken Parmesan Recipe
We recently came across a delightful recipe for Chicken Parmesan on Cheerful Cook. The original recipe looked absolutely delicious, but since we prefer gluten-free meals, we decided to adapt it using gluten-free ingredients. This way, everyone, including those with gluten sensitivities, can enjoy this cheesy, comforting dish. Here’s our improved, gluten-free version!
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 cup gluten-free all-purpose flour (e.g., Bob’s Red Mill Gluten-Free 1-to-1 Baking Flour)
- 2 large eggs
- 1 cup gluten-free breadcrumbs (e.g., Ian’s Gluten-Free Panko Breadcrumbs)
- ½ cup grated Parmesan cheese
- 1 cup gluten-free marinara sauce (e.g., Rao’s Homemade Marinara Sauce)
- 1 ½ cups shredded mozzarella cheese
- 2 tablespoons olive oil
- Fresh basil leaves for garnish
Instructions:
Prepare the Chicken:
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper.
- Dredge each chicken breast in gluten-free flour, shaking off any excess.
Bread the Chicken:
- In a shallow bowl, beat the eggs.
- In another shallow bowl, combine the gluten-free breadcrumbs and grated Parmesan cheese.
- Dip each chicken breast into the beaten eggs, then coat it with the breadcrumb and Parmesan mixture, pressing lightly to adhere.
