Easy Gluten-Free Chicken Spaghetti Recipe
We recently stumbled upon a fantastic Chicken Spaghetti recipe from The Cozy Cook. Inspired by the flavors and comfort of the original dish, we've adapted it to be gluten-free, making it suitable for those with gluten sensitivities. Ingredients:
- 2 cups cooked chicken, shredded
- 12 ounces gluten-free spaghetti (e.g., Barilla Gluten-Free Spaghetti)
- 1 cup diced onions
- 1 cup diced green bell pepper
- 2 cloves garlic, minced
- 1 can (10.5 ounces) gluten-free condensed cream of chicken soup (e.g., Pacific Foods Organic Cream of Chicken Condensed Soup)
- 1 can (10.5 ounces) gluten-free condensed cream of mushroom soup (e.g., Progresso Gluten-Free Creamy Mushroom Soup)
- 2 cups shredded cheddar cheese, divided
- 1 cup gluten-free chicken broth
- 1 can (10 ounces) Ro-Tel diced tomatoes and green chilies, undrained
- 1 teaspoon seasoned salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 2 tablespoons olive oil
Instructions:
Cook the Spaghetti:
- Cook the gluten-free spaghetti according to the package instructions until al dente. Drain and set aside.
Prepare the Chicken and Vegetables:
- In a large skillet, heat the olive oil over medium heat. Add the diced onions and green bell pepper, and cook until softened, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
Make the Sauce:
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the gluten-free condensed cream of chicken soup, gluten-free condensed cream of mushroom soup, gluten-free chicken broth, Ro-Tel diced tomatoes and green chilies, seasoned salt, black pepper, and cayenne pepper (if using).
Combine Ingredients:
- Add the cooked and shredded chicken, sautéed vegetables, cooked gluten-free spaghetti, and 1 cup of shredded cheddar cheese to the bowl with the sauce. Mix everything until well combined.
Bake the Casserole:
- Transfer the mixture to a greased 9x13-inch baking dish. Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top.
- Bake in the preheated oven for 30-35 minutes, or until the cheese is melted and bubbly.
Serve:
