We recently stumbled upon a fantastic Chicken Spaghetti recipe from The Cozy Cook. Inspired by the flavors and comfort of the original dish, we've adapted it to be gluten-free, making it suitable for those with gluten sensitivities. Ingredients:

  • 2 cups cooked chicken, shredded
  • 12 ounces gluten-free spaghetti (e.g., Barilla Gluten-Free Spaghetti)
  • 1 cup diced onions
  • 1 cup diced green bell pepper
  • 2 cloves garlic, minced
  • 1 can (10.5 ounces) gluten-free condensed cream of chicken soup (e.g., Pacific Foods Organic Cream of Chicken Condensed Soup)
  • 1 can (10.5 ounces) gluten-free condensed cream of mushroom soup (e.g., Progresso Gluten-Free Creamy Mushroom Soup)
  • 2 cups shredded cheddar cheese, divided
  • 1 cup gluten-free chicken broth
  • 1 can (10 ounces) Ro-Tel diced tomatoes and green chilies, undrained
  • 1 teaspoon seasoned salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons olive oil

Instructions:

  1. Cook the Spaghetti:

    • Cook the gluten-free spaghetti according to the package instructions until al dente. Drain and set aside.
  2. Prepare the Chicken and Vegetables:

    • In a large skillet, heat the olive oil over medium heat. Add the diced onions and green bell pepper, and cook until softened, about 5 minutes.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Make the Sauce:

    • Preheat your oven to 350°F (175°C).
    • In a large bowl, combine the gluten-free condensed cream of chicken soup, gluten-free condensed cream of mushroom soup, gluten-free chicken broth, Ro-Tel diced tomatoes and green chilies, seasoned salt, black pepper, and cayenne pepper (if using).
  4. Combine Ingredients:

    • Add the cooked and shredded chicken, sautéed vegetables, cooked gluten-free spaghetti, and 1 cup of shredded cheddar cheese to the bowl with the sauce. Mix everything until well combined.
  5. Bake the Casserole:

    • Transfer the mixture to a greased 9x13-inch baking dish. Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top.
    • Bake in the preheated oven for 30-35 minutes, or until the cheese is melted and bubbly.
  6. Serve:

    • Remove from the oven and let it cool for a few minutes before serving. Enjoy your delicious gluten-free Chicken Spaghetti!
